This is the third collection of my annual Spring Migration series, celebrating the beauty and magic of the billions--yes, billions--of birds moving through North America right now. But it is the first of these where the design creates a whole scene, spread across the surface of all 12 chocolates. I wrote about how I create the scene in recent one of my newsletters.
This collection includes six flavors of ganache and gianduja, most using chocolate made from rare, heirloom cacao grown in Central and South America--places that many of the birds featured in the collection live during our North American winters. The flavors draw from where these birds winter, too: rum & molasses, mango & habanero, brazil nut gianduja, two tropical pâte de fruits over ganache -- soursop and naranjilla, and some fruity Aji Amarillo chilis!
This is the last collection until Fall, as it will soon be too warm for reliable (and reasonable) shipping.
