Spring Migration Collection

This is the third collection of my annual Spring Migration series, celebrating the beauty and magic of the billions--yes, billions--of birds moving through North America right now. But it is the first of these where the design will create a whole scene, spread across the surface of all 12 chocolates. I wrote about how I create the scene in recent one of my newsletters.

This collection will include six flavors of ganache and gianduja, most using chocolate made from rare, heirloom cacao grown in Central and South America--places that many of the birds featured in the collection live during our North American winters. It's too early to say what the six flavors will be, as I always like to try new ones and see what the chocolate inspires. But, they will be delicious!

This collection will ship in mid to late April. And it will be the last collection until Fall, as it will soon be too warm for reliable (and reasonable) shipping.
