A Light in the Woods - A December Collection

Note: This collection will be shipped (or available for local pickup) the week of December 15.

Long, long ago, I read a series of books with illustrations like the one here. I was transfixed by the stories, but especially by the deep woods in winter with a lone lamp shining. 

Thus the theme for the December collection—A Light in the Woods—available for preorder now.

As usual, there will be more about the theme and all its meanings in the booklet that accompanies the chocolates, but I'll leave it at that for now.

What about the flavors? For many of us, December is such a time of tradition. This time of year always transports me to the scents and tastes of the Christmas markets of Germany, which I experienced as a child and have visited a number of times since. Two years ago, my December collection focused explicitly on that theme. This will be different, but I will likely revisit a few of those flavors.

• I probably can't resist a dark chocolate ganache flavored with Glühwein (mulled red wine to non-German speakers);
• Caramelized almond gianduja will be hard to forgo;
• Something with hazelnuts;
• I may have to revisit some variation of a flavor I did several years ago with a grapefruit pâte de fruit ...

... well, you know the drill, matching flavorings to the variety of exceptional chocolate couvertures I have on hand takes some tasting and inspiration. So I'll leave it at that for now, but as usual, there will be six bonbon varieties—two of each flavor for a total of twelve in a box.
